The “A Tavola con lo Chef” s.r.l. school is an important didactic establishment amongst the most advanced in Italy which has operated in the ambit of professional education since 1992. Its historical premises, in Via dei Gracchi, 60, inaugurated in December 1991, are the principal centre where administration as well as all the amateur cooking courses, confectionary, pizza making and, since 2008, professional courses, take place.
The amateur courses are entirely practical and give all gourmet students the opportunity to actively participate in lessons with their teacher.
In July 2005 a second school was opened in Via Pineta Sacchetti, 263, dedicated exclusively to professional courses.
A laboratory dedicated to the making of pizza, a highly technological area dedicated to professional cookery courses, another dedicated exclusively to confectionary and laboratory for preparation of ice-cream and finally an area fitted out as a real bar and dedicated to courses for barmen and the preparation of coffee. Since 2012 the courses for barmen and the preparation of coffee have been merged in a project named “ABC Accademia Barman e Caffeteria”, always under the directory of “A tavola con lo Chef”.
A course on Food Costs , according to HACCP regulations (Hazard Analysis and Critical Control Point) and various Master in the cooking sector including pastry and pizza making complete the choice of professional courses.
“A Tavola con lo Chef” to Pineta Sacchetti is a excellent centre on restaurant professionist, leaving the work of amateur courses to Via dei Gracchi.
Currently the two structures occupy an area of 700mq2. The school pays particular attention to the choice of equipment taking particular care in choosing the best on the market. But above all it has selected and trained with extreme attention the teaching staff, creating, in more than 20 years of activity a body of professional chefs, specialized in teaching.
During recent years students who have attended both the professional courses and the amateur ones are, in all, 900 per year. From an estimate , in the first year, 70 of the students found employment, even if it was only seasonal and 20 job within their own enterprises.
The didactic programmes of the professional courses for chefs and pastry makers have the sponsorship and the recognition of the “Unione Cuochi Lazio Associazione di Roma” and the “Federazione Italiana Cuochi Regione Lazio” and as well as collaborating with the “Confartigianato”.
Furthermore, the school is a private institution also operating in the social field, collaborating with “Enti no-profit” such as the Municipality of Rome, Caritas Diocesana of Rome, the Centro Enea for political refugees; organizing gastronomic events in collaboration with the O.N.G. which operate in favour of developing countries.
